PURPOSE OF THE CONTEST The Montana State Fair Adult Beef Cook-Off is conducted annually to promote Montana's BEEF industry. ELIGIBILITY FOR THE CONTEST: Any adult may enter the contest. Contest entry forms are available at the Cascade County Extension Office County Extension Office 1807 3rd St. N.W. - Westgate Mall Entry deadline is July 25nd, 2006. QUICK AND EASY BEEF CONTEST - RULES AND GUIDELINES Includes three printed or typed copies of the recipe with the entry blank. The number of servings must be included. The entry must serve four our more people with a minimum of four ounces of BEEF per serving. The entry must be suitable for a main dish at a meal.  No snacks or dishes may be served on a bun. The dish must be cooked to completion in 30 minutes or less. No more than six ingredients, not including spices or seasonings, will be permitted. There will be no outdoor cooking. No other meat but beef may be used (including deli meat). Placemats and serving spoons may be used; centerpieces or table settings are not permitted. Marinating meat will not be considered against the "ease of preparation." Wine or sherry will be permitted in the cooking of the dish. Contestants must dress appropriately for cooking, including an apron, hair net or covered hair. Team entries will not be permitted. The contest will be conducted under the supervision of a CattleWomen Chairman and MSU Extension Service Family and Consumer Sciences Representative.

1. Meat and all other ingredients for the preparation of the recipe.
2. Equipment needed to prepare the recipe.
3. Utensils needed to prepare the recipe.
4. Serving items needed for the finished product.

• The dish must be prepared at the contest site and placed on an appropriate serving dish or container.
• The dish or finished product must be ready for judging at the designated time, regardless of a late start, or forgotten items.
• NO ONE will be allowed in the food preparation area, except the contestants at their preparation time, and the Chairman.
• Twelve contestant's recipes will be selected from the entries submitted BEFORE the contest:

• Judging will be completed by three qualified persons, including a Family and Consumer Sciences Representative.
• Selection of judges will be completed by the local CattleWomen Chairman.
• Techniques in preparing the dish WILL NOT be considered.
• Judging will be completed based on the finished product.
• No one will be allowed in the judging area, during judging, except the judges.
• The judges decisions are final!
• Contestants will receive the judges score sheets.
• Cash prizes in each category of the contest:
• 1st Place.....$150
• 2nd Place....$  75
• 3rd Place.....$  50
• Judging will take place from 2:00p.m.-5:00p.m.
• Winners will be announced at 5:00p.m.
